first up...
grandma jeanne's buckeyes
1 1/2c smooth peanut butter
2c powdered sugar
3T melted butter
1T maple flavoring
*combine all until well mixed. roll into 1in balls and place on wax papered cookie sheet. refrigerate at least 30min. (you can keep them in the fridge for pretty much as long as you want/need. i left mine in for a couple hours, and they were just fine.)
1pkg chocolate chips
2 squares almond bark
*melt together until smooth, either in microwave safe container or over double boiler.
dip cold peanut butter balls in chocolate and replace on wax papered cookie sheet. allow to cool and set at room temp or in the refrigerator. (i did the double boiler to make sure the chocolate didn't decide to harden at all and tossed them in the fridge after dipping. this made for a nice little crunch to the chocolate.) store in an airtight container at room temp or in the fridge.
and then there's this one from pioneer woman (with some tweaks)...
2c cooked, cubed chicken
3c uncooked angel hair spaghetti, broken into 2in pieces
2cans cream of chicken soup
3c shredded cheddar cheese
1/4c diced green peppers
1/4c diced onion
2c chicken broth
1tsp lawry's seasoned salt
salt and pepper, to taste
*in separate pots, boil chicken until cooked through and spaghetti until al dente simultaneously. in a large bowl, combine all ingredients except for 1c cheese. spoon mixture into baking dish and top with remaining cheese. bake @ 350 for 30-40min or until hot and bubbly. (if the cheese on top begins to burn, cover dish with foil.)
both of these recipes are very simple and make for some delicious eats. i handed out the buckeyes as part of our neighborhood christmas treats and have had multiple people ask me for the recipe. i cannot believe i didn't get this recipe from aunt donna sooner! i could eat my body weight of those things. no lie. and the spaghetti is really yummy and keeps for a couple days in the fridge. served with texas toast, it's become one of my favorite go-to meals.
I am going to try both!
