we got a bountiful basket a week or so ago (maybe longer?), and we've had 9 small fuji apples staring me in the face every. single. blasted. time i've opened the fridge. (mor prefers his apples cold. he'd throw them in the freezer if i'd let him. i won't.) then, today, finally...i looked on the outside of my fridge and saw it, her, them : my great aunties. they used to make us homemade redhot applesauce. so, i got to work. i peeled those apples, diced them, tossed them in some lemon juice, poured some water, sugar and cinnamon in a pot, stirred it all up, covered and simmered it. 20minutes later, after a trip to the blender, i had some amazing homemade applesauce of my own. i promptly disregarded everything--penny needing water and to potty, finn yelling at me to play trains, the mess all over my counter from a leaking blender--and gobbled up a healthy (read : heaping) bowlful. yum yum yumyumyum!
quick and easy applesauce
8 small fuji apples - peeled and chopped
1-2tsp lemon juice
1c water
1/4c sugar
1/2tsp cinnamon
toss apples in lemon juice, then throw in pot with water, sugar and cinnamon. cover, heat over medium for 15-20min until apples are tender. strain off liquid and spoon apples into blender. pulse until only slightly chunky. (i like my applesauce smooth rather than chunky, so i hit the liquefy button.) add in extra liquid as needed. eat immediately!!! or store in airtight contained in fridge for up to 5 days.
